
I made this super easy dessert this week. You can also make it with other fruits - fresh, tinned or frozen.
WHAT YOU NEED
a bunch of frozen berries - a cup or so
½ cup caster sugar, plus 1 tablespoon extra
¼ cup plain flour
¼ cup self-raising flour
4 eggs
2/3 cup cream
1/3 cup milk
2 teaspoons vanilla extract
Icing sugar for dusting and whipped cream, to serve
METHOD
1. Preheat oven to moderate, 180°C. Lightly butter up a 2-litre ovenproof dish.
2. Chuck the berries in the dish
3. Meanwhile, place ½ cup sugar and flours into a large bowl. Beat in eggs, cream, milk and vanilla. I used a hand-held mixer.
4. Pour egg mixture over fruit. Sprinkle with extra sugar. Bake for 55-60 minutes until golden and just set.
5. Dust with icing sugar. Serve with whipped cream. Yay for more cream!
